SPANISH CHURROS, fried cookies, easy Carnival recipe, typical sweets to make quickly ideal for parties.

Here we are in Spain with Spanish churros! Simple to make, they are fried cookies covered in chocolate sauce. They resemble Carnival fritters and are indeed a treat of the period but in Spain, they are found all year round.

These fried cookies, Spanish churros, can be made with or without eggs; I’ve made them both ways. Without eggs, they lose a bit of shape but stay lighter and are great for those with intolerances. My dough is made with the Bimby, but you can proceed without it; they are cooked on the stove, and it’s like making choux pastry or zeppole, nothing complicated.

Great for birthday parties, buffets, or satisfying the craving for something good in no time, churros are eaten by dipping them in a nice chocolate sauce.

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1 egg
  • 1/2 tsp baking powder
  • 1/2 cup water
  • lemon zest
  • 1/2 cup water
  • 3.5 oz chocolate
  • 3.5 tbsp heavy cream

Steps

You can omit the egg; I’ve tried them both ways. In the case of a double batch, with more eggs, add them one at a time, incorporating well before adding the next.

  • In a pot, heat the water with salt; when it starts to boil, add the sifted flour and baking powder.

  • Cook over low heat, stirring with a wooden spoon until the dough thickens and detaches from the sides of the pot.

  • At this point, add the egg while continuing to stir.

  • Transfer everything into a piping bag with a star nozzle and cook in a pan with hot oil for a couple of minutes on each side, then place them on paper towels to remove excess oil.

  • Prepare the chocolate sauce by melting it with water, cream, or milk.
    Serve warm with the sauce.

  • With the Bimby: If using lemon, chop it with sugar speed 10 for a few seconds.

  • Add water and salt 8 minutes at 212°F speed 3

  • At this point, add the flour and baking powder with the spatula inserted, 30 seconds speed 5, now you can decide whether to add the egg or not, incorporate well, if necessary, add a bit of flour, half a tablespoon no more.

  • Let it cool a bit and pour the mixture into the piping bag.
