Ingredients

  • 1 piadina
  • 1 oz speck
  • 2 oz feta
  • 3 green olives
  • 2 oz avocado

Preparation

  • Cut the piadina with a 4 in cutter and place them in a muffin tin like this HERE

  • Place in a preheated oven at 392°F and bake for 5-7 minutes; the baking is just to shape them, the baskets should remain soft.

  • Remove from the oven and fill with a slice of speck, add feta and avocado pieces and the olives sliced thinly.

  • For garnish I added red currants and mint leaves, of course optional.
