When I have little time but want to bring something tasty to the table, these SPECK and PROVOLA ravioli immediately become my favorite solution. They are quick bites, ready in minutes, perfect as an easy and quick starter for a Sunday lunch, a homemade aperitif or a savory buffet. The idea comes from wanting to prepare finger food for parties without stress, using simple ingredients and getting a super melty result that everyone agrees on.
These are bites without puff pastry and without yeast, so practical even when the fridge is bare but you have speck and provola to use up. Excellent hot, with melty cheese, but also delicious warm for a homemade aperitif or as a simple yet impressive starter.

Ingredients
- 3.9 oz flour (about 7/8 cup — the type you usually use)
- 3 1/3 tbsp water
- 1 pinch salt
- 2.8 oz provola cheese
- 1.8 oz sliced speck
Steps
Pour the flour with the salt and the water into a bowl or into a food processor and mix well; then move to a floured work surface and roll out the dough.
Cut out rounds with a glass or a 2 3/4-inch round cutter, fill with small pieces of speck and provola.
Fold into a half-moon, seal the edges and arrange them on the baking sheet, brush with oil and bake at 356°F for about 15 minutes, until golden.
