Ingredients

  • 2 eggs
  • 2.1 oz sugar
  • 2.8 oz all-purpose flour
  • 1 teaspoon baking powder
  • 1 lemon zest
  • 4.4 oz custard
  • 1 cup heavy cream, 35% fat

Steps

  • Prepare the basic dough, beat the eggs with the sugar until they double in volume, add the flour with the baking powder and lemon zest, fold manually, and pour the mixture onto a tray lined with parchment paper.

  • Form a rectangle of about 8 x 10 inches, level it, and bake in a preheated oven at 392°F for 7 minutes, then remove from the oven, let cool slightly, and cut with a 4-inch round cutter or into 6 squares.

  • Place the disks in a muffin mold, bake and cook in a preheated oven at 356°F for 4-5 minutes, fan-assisted.

  • Prepare the custard and let it cool in a bowl covered with cling film in contact with the surface.

  • When the cream is cold, whip the heavy cream and combine the two mixtures.

  • Fill the baskets with the help of a piping bag with a star nozzle, decorate with red currants and rosemary sprigs.
