Ingredients
P.s. for a less “chewy” effect due to the yogurt, add a bit of butter.
- 1 1/4 cups all-purpose flour
- 1 egg
- 3 tbsps sugar
- 1 pinch salt
- Half lemon juice
- 2 tbsps extra virgin olive oil
- 2 tbsps 0% fat Greek yogurt
- Half tsp baking powder
Steps
Pour the flour into a bowl, add the sugar, baking powder, egg, oil, a pinch of salt, the juice of half a lemon, and mix well.
Add the yogurt and mix, if needed add a bit of oil or yogurt. The mixture should be soft, not firm like shortcrust pastry.
Place a sheet of parchment paper on a baking tray, then using a spoon, form the cookies and sprinkle with granulated sugar.
Bake at 356°F for 15 minutes.
