When you have leftover stale bread, it’s nice to find a recipe to reuse it. The stale bread pizza with tomatoes and olives is delicious, simple, and quick, perfect even as an appetizer.

For the stale bread pizza recipe, I used bread, cherry tomatoes, black olives, capers, and fiordilatte. With a sprinkle of oregano and a drizzle of oil, it was a hit, better than a steak for me.

Of course, you can top or prepare this kind of pizza as you like. Mine is small, but a baking sheet with all these slices of bread will be perfect even as an appetizer.

Ingredients

  • 3 slices stale bread
  • 10 olives (black or green)
  • 1 tbsp capers
  • 2.8 oz fiordilatte (provola or mozzarella)

Steps

  • Soak the bread in water or milk, then drain and arrange the slices on a lightly oiled baking tray.

  • Cut the cherry tomatoes into small pieces and place them on the bread. Add the pitted olives, capers, chopped fiordilatte, and oregano to taste.

  • Drizzle with oil, season with salt, then bake in a hot oven at 356°F for 10-15 minutes, just enough to melt the cheese.

  • I used the air fryer at 374°F for about 8 minutes.
