Ingredients
- 1 avocado
- 4 slices sandwich bread
- 60 g mascarpone
- 50 g smoked salmon

Cut the bread with a star-shaped Christmas cutter; you should get 6 stars per slice.
Cut the avocado into pieces and place it in a cup, add the mascarpone, salt, white pepper, and a squeeze of lemon juice to prevent browning, blend everything with a hand blender.
Spread the cream on half of the canapés, make a hole in the center of the others with a smaller cutter and pair them.
Place the salmon in the center, garnish with pink peppercorns.
