- 1.1 lbs squid

- 2 tbsp breadcrumbs
- 1 egg
- 3 tbsp black olives
- 1 clove garlic
- 7 oz tomato sauce
- 2.8 oz provolone
- 1 tbsp capers
Steps
For the recipe, I used rather small squid, the total weight was 250 g.
The recipe is for one or two medium-large squid.
You can add Parmesan or Pecorino, minced garlic, and other seasonings you prefer.
Clean the squid by emptying the head, in the case of large squid you might be able to turn them inside out like a sock to clean them more easily.
Remove the tentacles, eliminate the beak and set them aside.
In a bowl, soak the bread with water or milk, add the breadcrumbs, the egg and mix.
Add the pitted and chopped olives, then the provolone cut into pieces, and salt to taste.
Fill the squid and seal with a toothpick.
Brown the garlic, add the tomatoes, the olives and the capers, cook for a couple of minutes then add the squid and cook for about 20-25 minutes with the lid closed.
Bon appétit
