Ingredients

  • 1 1/4 cups pearl spelt
  • 1 bell pepper
  • 1 zucchini
  • 4 oz tuna
  • 3/4 cup sweet corn
  • 1 cucumber
  • 1 avocado
  • arugula
  • 1/2 cup black olives
  • 2 carrots

Steps

  • Rinse the spelt under running water and boil it in plenty of salted water following the times indicated on the package (about 20-25 minutes). Drain and let it cool.

  • Meanwhile, grill or sauté the zucchini and bell pepper cubes, or use them raw if you prefer a crunchier texture.

  • In a large bowl, combine the cooled spelt with the tuna, vegetables, olives, corn, cucumber, and avocado.

  • Add the julienned carrots and cubed avocado at the last moment to keep it crunchy.

  • Dress with extra virgin olive oil, salt, pepper, and, if you like, a bit of lemon juice for a touch of acidity.

  • Mix well and let rest in the fridge for at least 30 minutes before serving.
