- Difficulty: Very easy
- Cost: Very cheap
- Preparation time: 20 Minutes
- Portions: 8
- Cooking methods: Stovetop
- Cuisine: Italian
Ingredients
- 14 oz ladyfingers
- 14 oz mascarpone
- 2 eggs (or 0.5 cups of cream)
- 0.5 cups sugar
- 1.7 oz limoncello
Steps
You can omit the eggs and substitute with cream, pasteurize them or use raw, as you prefer. In the recipe, the yolks are cooked.
Beat the egg whites with a pinch of salt and set aside.
Mix the yolks with the sugar in a small saucepan, move to the stovetop and cook on very low heat for a few minutes, stirring constantly to avoid scrambling them by overcooking, I usually keep the saucepan slightly off the direct flame.
Mix the mascarpone with the limoncello, add the cooled or very tepid yolks and the egg whites, work with a spatula, you can add grated lemon zest if you prefer.
Soak the cookies in milk and place them on the bottom of a baking dish, make a first layer of cream and continue alternating ingredients until finished.
Add lemon zest for decoration and refrigerate until serving.
Bon appétit
