Super Soft Befana Donuts

Ingredients

  • 2 1/2 cups all-purpose flour (or type 0)
  • 1 tsp fresh yeast
  • 1/2 cup milk
  • 3 1/2 tbsp butter
  • 3 1/2 tbsp ricotta
  • 1 egg
  • 1/3 cup sugar
  • lemon zest
  • 2 tbsp chocolate chips

Steps

  • Dissolve the yeast in cold milk and pour it into the mixer.

  • Then add the flour, sugar, egg, diced butter, ricotta, and grated lemon zest.

  • Knead well, adding flour if too soft or milk if too firm.

  • The dough should be soft and elastic, not sticky.

  • Then add the chocolate chips, about 2-3 tablespoons, and finish working the dough.

  • Remove it from the mixer, shape into a ball, and let rise in a covered bowl for about 3 hours.

  • It should double in size.

  • After rising, divide the dough into pieces of about 90-100 grams.

  • You should be able to make 7-8 donuts.

  • Shape into sticks and close into donuts.

  • Then let rest on a baking sheet lined with parchment paper or greased for 20 minutes.

  • Bake for 15 minutes at 350°F, they should turn golden.

  • The donuts are ready to eat, if you need to store them, let them cool completely before sealing them in food bags.
