Ingredients

  • lemon zest
  • 1 pinch vanillin
  • 1.41 oz butter
  • 2/3 cup sugar
  • 1 cup milk
  • 1 egg
  • 4 cups all-purpose flour
  • 1 pinch salt
  • 0.35 oz fresh brewer's yeast

Steps

  • Dissolve the yeast in the milk.

  • Pour the flour into a bowl, add the sugar, the butter in pieces, the egg, and the lemon zest, start kneading.

  • Gradually add the yeast as you knead, then the vanillin, and finally the salt.

  • Work the dough until smooth, then form a ball and let it rest in a covered bowl for about 3-4 hours.

  • Once risen, divide the dough into 8 pieces, form balls, close them underneath and let them rest on parchment paper for 20 minutes.

  • Heat oil in a deep skillet and cook the doughnuts until golden brown.

  • Drain on kitchen paper, roll in granulated sugar, and serve or fill them as you like.
