The recipe for Apulian pettole is very simple, you prepare a bread dough with baker’s yeast, then fry them and top with honey or salt and they are great with cold cuts.

Ingredients
- 3/4 cup all-purpose flour
- 1/3 cup water
- 1/2 tsp fresh baker's yeast
- 1 pinch salt
Preparation
Prepare the dough, pour the flour with salt into a bowl, dissolve the yeast and add it.
Knead well, obviously for a larger dough you can use a stand mixer.
Cover with plastic wrap and let it rise until doubled, about 3 hours.
Once risen, heat oil in a high-sided pan or fryer and with the help of two greased spoons take some dough and let it fall into the oil.
Fry until golden, turning them then drain on kitchen paper.
Place them on the serving dish and add honey or powdered sugar.
