The spoonable hazelnut cream is a delicious treat that can be prepared in 10 minutes, perfect after lunch or dinner or to enrich desserts such as cakes, tarts, pandoro, and panettone.
The recipe for preparing the hazelnut cream is very simple: once you slightly toast the hazelnuts to remove the outer skin, you blend them with sugar, butter, cream, and melted chocolate, pure delight for the palate.
I used cream, but milk is also fine for a slightly lighter dessert, or you can add whipped cream or egg whites for an even more delicious fluffy dessert.

Ingredients
- 3/4 cup peeled whole hazelnuts
- 1/4 cup powdered sugar
- 1.75 oz 60% dark chocolate
- 3 tbsp whipping cream (or milk)
- 1 tbsp butter (or oil)
- 1 pinch salt
Steps
If the hazelnuts are not already toasted, put them in the oven at 350°F for 8-10 minutes, stirring occasionally. Then rub them in a dishcloth to remove the skins.
Meanwhile, melt the chocolate in a double boiler.
Put the hazelnuts with the powdered sugar in a mixer and blend until you get a smooth paste. It may take a few minutes, and occasionally stop to scrape the sides of the container.
Add the melted chocolate, butter, and cream to the hazelnut paste. Blend again until you get a smooth and homogeneous cream. Add a pinch of salt.
Pour the cream into a clean glass jar and store in the refrigerator. It lasts for about 1-2 weeks.

If you want a sweeter cream, slightly increase the amount of sugar.
For a vegan version, use dairy-free dark chocolate and plant-based milk (such as almond or soy milk).
