Ingredients

  • 7 oz egg tagliatelle
  • 1 radicchio
  • 3 oz gorgonzola and mascarpone
  • walnuts
  • black pepper
  • 1 shallot (small, optional)

Steps

  • Bring the water to a boil for the pasta and salt it, slice the radicchio into thin strips.

  • In a pan warm the oil and sauté the chopped shallot for 1 minute, if using it; add the radicchio and toss it for 3-4 minutes until it wilts.

  • Cook the tagliatelle. In the pan with the radicchio add the gorgonzola in pieces and 2 tablespoons of the pasta cooking water and stir until it becomes creamy.

  • Drain the pasta and toss it in the pan with the sauce. Add broken walnuts and a grind of black pepper.
