Tiramisu with amaretti and cream

Ingredients

  • 3 eggs
  • 1.7 cups mascarpone
  • 0.8 cups whipping cream
  • 14 oz amaretti
  • 2 espresso cups coffee
  • as needed unsweetened cocoa powder

Steps

  • Prepare a strong coffee and let it cool.

  • Separate the egg yolks from the whites and beat the yolks with the sugar until you get a light cream.

  • Add the mascarpone to the cream and mix until smooth.

  • Whip the egg whites until stiff and gently fold them into the mixture.

  • Dip the amaretti in the coffee and place them side by side in a tiramisu mold, or crumble them.

  • Whip the cream and add it to the mascarpone mixture.

  • Pour half of the mixture over the amaretti and level carefully.

  • Add another layer of amaretti dipped in coffee and cover with the remaining mixture.

  • Finally, decorate with a layer of cream, sprinkle with cocoa, and let it rest in the fridge for at least 1 hour.
