Ingredients

  • 7 oz mascarpone
  • 2/3 cup whipping cream, 35% fat
  • 1/4 cup sugar
  • 1 egg yolk
  • 1 blonde orange
  • 2 tablespoons sugar
  • 1 tablespoon honey
  • 2.8 oz pandoro

Steps

  • Peel the orange, avoiding the white part, and put the peel in a blender, add the 2 tablespoons of sugar, the honey, and the fruit without the white part, essentially the segments without seeds, and blend everything, set aside.

  • Whip the cream with the mascarpone, work the egg yolk with the sugar in a small pot on the stove to pasteurize it or leave it raw depending on your habits, cook very little over low heat then add it to the cream and mix.

  • Place pieces of pandoro at the bottom of two cups or more, make a layer of cream, pandoro, and orange, continue until you finish the ingredients with the last layer using a piping bag to decorate.

  • Place in the fridge until ready to serve.
