Ingredients
- 7 oz mascarpone
- 2/3 cup whipping cream, 35% fat
- 1/4 cup sugar
- 1 egg yolk
- 1 blonde orange
- 2 tbsps sugar
- 1 tbsp honey
- 3 oz pandoro
Steps
Peel the orange, avoid the white part, and put the peel in a mixer. Add the 2 tablespoons of sugar, the honey, and the fruit without the white part, essentially the segments without seeds, and blend everything, set aside.
Whip the cream with the mascarpone, work the egg yolk with the sugar in a small pan on the stove to pasteurize it or leave it raw according to your habits, cook very briefly on very low heat then add it to the cream and mix.
Place pieces of pandoro at the bottom of two or more cups, make a layer of cream, pandoro, and orange, continue until the ingredients are finished with the last layer using a pastry bag to decorate.
Refrigerate until ready to serve.
