Ingredients

  • 14 oz semolina (or all-purpose)
  • 3.5 oz all-purpose flour
  • 1.5 cups water
  • 0.07 oz fresh yeast
  • 1 tbsp extra virgin olive oil
  • 0.35 oz salt
  • 7 oz cherry tomatoes (or tomato puree)
  • 1 clove garlic
  • as needed onion
  • as needed dried oregano
  • pecorino cheese
  • parsley
  • anchovies in oil

Steps

  • Dissolve the yeast in water, pour the flour into a bowl, add the water, oil, and mix, add the salt, and knead well.

  • Make a ball and let it rest overnight.

  • Once risen, take the dough and divide it into two parts if you want to make two pizzas or spread it on a rectangular baking tray.

  • Cut the cherry tomatoes into wedges or pieces, slice the onion, garlic, and chop the parsley, I added it after baking.

  • Drizzle with a little oil then add the toppings, optionally some tablespoons of tomato puree.

  • Add the cherry tomatoes, onion, garlic (omitted), a generous sprinkle of oregano, anchovies, and a grating of pecorino.

  • Preheat the oven and bake at 482°F

  • Lower the temperature to 437°F and bake for 12-15 minutes.
