Turkey Meatloaf in Speck Crust

TURKEY MEATLOAF IN SPECK CRUST, an easy recipe and quick, perfect for the Christmas menu, lunch or dinner, stuffed with cold cuts and cheeses.

The turkey meatloaf is delicious, even tastier in a crust, it was literally devoured, I did not add salt because there are already salted cold cuts and cheeses.

The recipe for the turkey meatloaf is very simple, I needed to prepare something quickly for Sunday’s lunch, and I thought a nice meatloaf would be perfect.

A simple and very rich dish, also great in the Christmas menu and still economical, perfect for many budgets.

Turkey Meatloaf in Speck Crust

Ingredients

  • 1.10 lbs Turkey (ground)
  • 1 Eggs
  • as needed Breadcrumbs
  • 4.23 oz Speck
  • 3.53 oz Cold cuts (assorted)
  • 2.12 oz Cheese (assorted)

Preparation

  • Place the meat in a bowl, add the egg, salt to taste, and mix well. I didn’t add salt because it’s rich in cold cuts.

  • Add breadcrumbs to firm up the mixture if needed, take it and place it on a sheet of parchment paper.

  • Form a rectangle, stuff with assorted cold cuts and cheeses, I used mild provolone and smoked cheese, then roll it up.

  • Sprinkle with breadcrumbs and wrap with speck, oil a pan and place the meatloaf in it.

  • Obviously, you can also bake it in the oven at 356°F for about twenty minutes, in a pan cook it over medium heat, then lower it, once it colors, turn it over.

  • Finish cooking, it cooks fast, even twenty minutes, so keep an eye on it, it cooks better over low heat with a closed lid.
