It’s an ancient recipe, one of those passed down from grandmother to granddaughter, but with such a particular touch that makes it different from all other apple cakes. Perfect for those who don’t like finding whole pieces of apple or don’t enjoy the texture of fruit in desserts — here the apples are present, but they almost melt, you barely feel them… and they smell delightful
The recipe for the upside-down Annurca apple cake was given to me by a friend: it was the one her grandmother used to make more than a century ago, a true recipe from another time, genuine and clever in its simplicity.
I’ve seen similar ones in modern cookbooks, but none are like this!
The peculiarity of this Neapolitan cake with Annurca apples is the bottom of the pan: instead of butter and flour, it’s sprinkled with breadcrumbs, a little trick that creates a crunchy and golden base. Once baked, the cake is turned upside down, and the apple slices with the peel soften with the heat of the freshly baked cake, creating a shiny and fragrant surface, almost caramelized.

Ingredients
- 3 eggs
- 1 3/4 cups flour (the one you usually use)
- 1 cup sugar
- 1/2 cup vegetable margarine
- 3 Annurca apples
- 1 packet baking powder
- 3.5 tbsp milk
Steps
Preheat the oven to 300°F
Beat the egg whites separately, beat the sugar with the melted butter and egg yolks, add the flour, baking powder, and milk, mix everything.
Fold in the egg whites, using a kitchen mixer, a whisk, or by hand if you prefer.
Grease a 9-inch baking pan well and cover it with breadcrumbs, for extra security you can place a sheet of parchment paper, grease the sheet too, and sprinkle with breadcrumbs.
Pour the mixture into the baking pan, the cake shouldn’t be too high, slice the apples and place them vertically in the pan.
Bake for about 45 – 50 minutes in the preheated oven.
Once done, turn it over onto a plate and sprinkle with powdered sugar.

Tips for making it perfect
Use well-ripened but firm Annurca apples, they hold up well to cooking and are more fragrant.
