I liked the recipe for veal rolls with tuna sauce I saw some time ago in a magazine immediately because it is not the usual presentation of veal with tuna sauce accompanied by a sauce.

Perfect also for other festive occasions or for Sunday, presented like this, they are much tastier in my opinion and much more elegant to see on the Christmas table.

Ingredients

  • 14 oz Beef (for roast beef)
  • 1 carrot
  • 1 stalk celery
  • 1 Golden onions
  • 11 oz tuna (canned)
  • 4 Anchovies
  • 4 tbsps Capers
  • 2 Eggs (hard-boiled)
  • 2 Egg yolks
  • 10.5 oz Mayonnaise
  • 1 Lemons
  • to taste Black pepper
  • to taste Extra virgin olive oil
  • to taste Salt

Preparation

  • Prepare a vegetable broth with a quart of water, the carrot, and the celery, bring it to a boil, cook for 20 minutes, add the meat, let it cook for 30-40 minutes, salt to taste.

  • Prepare the tuna sauce: put all the ingredients in a blender and blend well to obtain a cream; as for the oil, add a little, it doesn’t need much, use your discretion, you can even skip it.

  • The quantity of sauce is quite large to have well-stuffed rolls; you can also make half the dose if it seems excessive, and then adjust accordingly, as it is very quick.
     

  • When the meat is ready, it should remain pink in the center, but if you don’t like that, you can cook it a bit longer; a piece of this size should remain a little pink inside in 30-40 minutes, but not bloody, let it cool on a serving dish.
     

  • Slice the meat thinly, considering you need to roll it, about a couple of millimeters, be careful, stuff the meat in the center with the tuna sauce and roll it, place it on the serving dish.

  • Garnish with carrot slices, capers, and chopped parsley; in this case, you can add more carrots to the broth, I diluted some sauce with water to spread it over. Bon appétit
