I love vegetable soups both in summer and winter, and right now there are many delicious vegetables such as broccoli, cabbage, savoy cabbage, cauliflower, pumpkin, perfect for creating a nice first course that warms the stomach.
The recipe for preparing the vegetable cream soup is very simple, I didn’t use potatoes but you can always add them if you prefer, sweet potatoes are also great, very protein-rich and low in carbohydrates, ideal for a diet.

Ingredients
- 10.5 oz savoy cabbage
- 14.1 oz broccoli
- 1.8 oz spinach
- 2 carrots
- 1 leek
- 1 celery
- 3 1/3 cups vegetable broth (or water)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon non-dairy cooking cream (or Greek yogurt)
Steps
Wash all the vegetables well, slice the leek or onion and the celery.
In a large pot, heat the oil and sauté the leek (or onion) with the celery and carrots for 3-4 minutes.
Add the savoy cabbage and broccoli and mix well.
Let cook for 20-25 minutes over medium heat, until they are soft.
Add the spinach only in the last 5 minutes of cooking.
Turn off the heat and blend everything with an immersion blender to obtain a smooth consistency.
Season with salt and pepper and, if desired, add a pinch of nutmeg or turmeric.
If you want a creamier soup, incorporate a tablespoon of non-dairy cream or Greek yogurt.
Pour the soup into bowls and finish with a drizzle of raw oil and a sprinkle of parmesan, if you like.
