Ingredients

  • 3/4 cup all-purpose flour (the one you usually use)
  • 3.4 fl oz water
  • 1 tsp instant baking powder (for savory preparations)
  • 1/2 tsp salt
  • 3 tbsp grated Parmesan
  • 1 pinch pepper (optional)

Steps

  • Put the flour in a bowl, add the baking powder, the Parmesan and the water, whisk vigorously by hand and let the batter rest for a moment.

  • Heat the oil in a pan. When it reaches temperature, drop the batter into the pan using two tablespoons or teaspoons, depending on how large you want them.

  • Smaller ones are more flavorful; cook them turning for a few minutes.

  • Drain on kitchen paper and serve with pepper or extra Parmesan.
