WAGONER’S POTATOES IN A PAN, easy and quick side dish to prepare, perfect recipe for lunch or dinner, great for accompanying meat or fish.
Delicious wagoner’s potatoes, a simple and very tasty side dish that can be prepared both in the oven and in a pan and they are still excellent, gratinated and flavored with cheese.
The recipe of wagoner’s potatoes is inspired by the typical first course prepared with cheese, parsley, and chili pepper, Sicilian version, or according to the Roman version with bacon and mushrooms.
Cooked in a pan due to the heat but they can be easily baked, your choice or when it cools down you can try them with the other cooking method.

Ingredients
- 1.1 lbs potatoes
- 2 tsps chili peppers (powdered)
- 1 tbsp chopped parsley
- 2 tbsps pecorino romano (or grated provolone)
- to taste breadcrumbs
Preparation
Wash and peel the potatoes then cut them into not too small pieces and boil them.
Drain well and let cool slightly, add a mixture of parsley, chili pepper, and cheese, mix gently.
Since aged cheese is not liked at home, I used grated provolone with a large-hole grater.
Season with a drizzle of oil and breadcrumbs, mix well, oil a non-stick pan and pour in the potatoes.
Cook over low heat first on one side then turn them carefully to avoid breaking and as soon as they are cooked add the provolone or pecorino and stir a little.
