Ingredients

  • 3 1/4 cups flour (cake/soft flour for desserts, or the all-purpose flour you normally use)
  • 2 eggs
  • 7 tbsp butter (soft, about 3.5 oz)
  • 6 tbsp + 1 tsp sugar (about 3 oz)
  • 5.3 oz walnuts (weight of kernels (about 1 1/4 cups chopped))
  • 3 tbsp honey (about 2 oz)
  • 1 tsp baking powder
  • pinch salt
  • lemon zest
  • 1 egg yolk
  • milk

Steps

  • Put the flour and sugar in a bowl, chop about 3.5 oz (approximately 3/4 cup) of walnuts and add them to the flour, add the sugar, salt and baking powder and mix.

  • Add the eggs, lemon zest, honey and the soft butter in pieces and start working everything together. Chop the remaining walnuts into small pieces and fold them into the dough.

  • Take the dough and divide it into pieces of about 3 oz each (or smaller if you prefer), roll into little logs, close into rings and place them on a baking sheet lined with parchment paper.

  • Prepare a mixture of the egg yolk and a splash of milk, brush the cookies and bake in a preheated oven at 356°F for about 15 minutes.
