Today I made some whole wheat ring cookies with chocolate chips, rustic and super quick cookies! Perfect for breakfast or to dip in milk, they can be made in a few minutes with brown sugar and whole wheat flour, for a healthier yet delicious version.
The texture is crumbly thanks to the quick shortcrust pastry, while the dark chocolate chips give it that irresistible touch. No need for a donut mold: just shape the rings by hand and bake them in the oven or air fryer as I did.
They smell like home and keep perfectly for days in a tin can. If you love simple cookies with character, these are for you!

Ingredients
- 1 1/4 cups whole wheat flour
- 1 large egg
- 1/4 cup butter
- 1 tsp baking powder
- 1/3 cup brown sugar
- 3/4 oz chocolate
Steps
Pour the flour into a bowl or food processor, add the baking powder, sugar, a pinch of salt, and some lemon zest for flavor or a pinch of vanilla.
Add the softened butter in pieces and the egg, knead well, and finally add chocolate chips or chunks and mix everything.
Divide the dough into 10 pieces, make rolls, and form into rings.
Place on a sheet covered with paper and bake at 355°F for about 15 minutes or in the air fryer at 347°F for about 12 minutes, turning them.
