Ingredients

  • 3 egg yolks
  • 1.6 oz sugar
  • 0.7 fl oz fortified wine (marsala or sparkling wine)
  • pandoro

Steps

  • Weigh the egg yolks and add the same amount of sugar.

  • Put a small pot of water on the stove and turn it on.

  • In a smaller saucepan, mix the egg yolks with sugar using a hand whisk, add the chosen liqueur, I used fortified wine, stir and move to the stove.

  • Cook the yolks in a bain-marie for 5 minutes, they should become frothy and soft.

  • Remove from the stove and let cool, then pour into cups alternating with pieces of pandoro.
