Ingredients

  • 1 zucchini
  • 3 slices bread
  • 1 tablespoon pistachio flour (or pistachios)
  • 2 tablespoons extra virgin olive oil
  • 3 slices bacon (flat)
  • 3 yellow cherry tomatoes
  • as needed chopped pistachios
  • as needed salt

Steps

  • Cook the slices of bread with a drizzle of oil in an air fryer at 392°F for 7-8 minutes or with a grill pan, oven, or skillet, as you prefer.

  • Blend the zucchini with oil and pistachio flour or shelled pistachios.

  • Stuff the bruschettas, add the bacon, and put back in the air fryer for a few minutes.

  • If you don’t have an air fryer, you can cook the bacon in a skillet and then place it on the bruschettas.

  • Add some cherry tomatoes and chopped pistachio for decoration.
