The name "oss buss" received the Municipal Designation (De.Co) from the Municipality of Milan in December 2007. Ossobuco must be braised; otherwise it loses all its poetry and goodness &#x2014; it is precisely with this cooking method that it becomes tender and acquires that incomparable flavor.
