An autumn dessert traditionally made in Siena and nearby areas for All Saints' Day and during October and November. It belongs to the wide variety of 'dolci dei morti' made throughout Italy &#x2014; like Pan dei morti in Milan or Rame di Napoli in Catania &#x2014; and is a fragrant filled bread with raisins and walnuts (the so-called 'Santi'), accented with black pepper and anise seeds. A delicate, delicious, easy-to-make treat once often made from leftover bread dough. Each family in Siena jealously guards its own version &#x2014; some prefer it saltier, some sweeter, some richer in dried fruit, some pepperier, some add wine to the dough and some do not. Here I share Nonna Giovanna's version, the grandmother of a dear Tuscan friend who is a real kitchen wizard.
