The sbriciolata with custard is a richer version of the classic Mantuan sbrisolona, and it's definitely one of the desserts we talk about; it is inspired by the more famous grandmother's cake, made with shortcrust pastry and pastry cream, which I always make with just a few eggs that everyone knows. The base of the sbrisolona with custard is actually a crumbly shortcrust base that creates a perfect fragile shell to hold a silky and delicate "fake" pastry cream! Fake because my pastry cream is not only quick and easy to make, but it is prepared with only one egg, which makes it light yet still indulgent and velvety. Crunchy and crumbly on the outside, creamy and velvety inside, the sbrisolona with custard is perfect for breakfast, an afternoon snack or a Sunday dessert and is a cake that seduces both young and old. The sbrisolona with pastry cream is perfect for beginners in the kitchen and also for those tired of the usual sponge cakes; the recipe is simple, inexpensive and uses ingredients you almost certainly already have in the pantry, like flour, sugar and butter.
