Goulash (also spelled Gulash or Gulasch) is a beef stew typical of Hungarian cuisine: a spicy, flavorful dish made with beef, onions, paprika and cumin. In its original version (Guly&#xE1;s-leves), Hungarian goulash was a humble dish: a meat soup with potatoes, lard and sometimes peppers, known as the "shepherd's soup" &#x2014; a hearty, energy-rich meal cooked over wood fires in large pots to sustain people during long, cold transhumances. Over time the Hungarian goulash spread across Europe, especially Germany, Austria and Trentino, and evolved a bit. My grandmother Fernanda was from Trentino and her goulash was one of the Sunday main dishes, served with mashed potatoes or polenta, just like roast pork shank or my beloved speck dumplings. Creamy and comforting, the Italian-style goulash recipe is quite simple: just follow the steps and balance paprika and cumin to achieve a perfect goulash! The most famous version is the beef goulash, tender and succulent, but you could also make it with venison, veal or even fish. My grandmother, however, always made it with beef and dusted the meat with flour to obtain a rich, tasty sauce, perfect for mopping up with homemade bread.
