It is a recipe found with many variations from Lebanon to North Africa. However, they all have in common the main ingredient, which is eggplant. Generally, eggplant pulp is mixed with tahini, lemon, oil, salt, and paprika, but I wanted to make a variation that recalls Sicily by replacing paprika with wild fennel flowers. It is a really easy recipe to make, I made it with the Bimby but it can also be made simply with a bowl and a fork and it is perfect as a dipping sauce for bread and focaccias during a buffet or appetizer.
