Wonderful places rich in history, postcard landscapes but above all a regional cuisine that, in my opinion, is among the best in Italy, if not the number one. And I don't think I'm biased by that 25% Sicilian blood that flows in my veins, because undoubtedly it's hard to find a dish that isn't good on this fantastic island. One of the dishes that won me over, which I had never tasted before, is Swordfish Parmigiana \u2014 a variant of the classic eggplant parmigiana that in Sicilian cuisine is practically an institution where ingredients from the land meet those from the sea, creating magical flavors. It might seem like a daring combination, but I assure you that once you try it it will become part of your favorite recipe book. A dish with an intense flavor, extremely easy to prepare, requiring few ingredients: essentially eggplants, tomato passata, swordfish and Parmigiano. Suitable as a delicious appetizer if served in single portions, it is perfect as a main course or even better as a single-dish meal for a dinner with friends or a family lunch. It also has the great advantage of being prepared in advance and served hot or at room temperature. Believe me, whichever option you choose it will be a great success and when you taste it for a moment you will feel as if you are on that wonderful island that is Sicily. SWORD FISH PARMIGIANA"}
