I really didn't know what to call this recipe — halfway between a fried dumpling (gnocco fritto) and an empty calzone — but in the end I decided: Empty fried panzerotti! This little recipe was born out of improvisation, the desire to make something tasty and the urgency to use up some Greek yogurt that was about to expire. The other day I noticed I had yogurt in the fridge and, knowing that this ingredient gives doughs a unique softness, I thought of using it to make a baked product similar to a Soft quark focaccia or a sandwich loaf made in the bread machine. Once the dough was ready, since it was warm and I didn't feel like turning on the oven, I decided to fry it, making many golden, crunchy, soft and delicious fried dumplings, just like panzerotti. We then filled these empty panzerotti with both cured meats and spreadable creams — this dough for stuffed dough fritters is versatile and pairs well with both sweet and savory. Let's go to the kitchen and prepare these empty fried panzerotti together — you'll see how wonderful they are!
