I hadn't eaten pasta and broad beans for years, and it was a great rediscovery. I remember my grandmother always made it when I was little, so I asked my mother for the recipe to recreate it exactly as she did, substituting slab pancetta for guanciale. I was so enthusiastic about how good it was that, during broad bean season these days, I decided to make large servings without changing anything: lots of onion and wild fennel, which gives this fabulous Calabrian dish its unique flavor. Make it \u2014 Calabrian pasta with broad beans is really excellent. If you want it lighter, you can omit the guanciale or pancetta and it will still be great, but keep in mind that broad beans are low in calories, so a bit of pancetta is fine."}
