Soft Apple Cake Grandma’s Recipe

The apple cake is a timeless classic, a simple dessert that feels like home; the smell of freshly baked apple cake is full of memories and beautiful stories. It’s the dessert I love the most, the one my mom and grandma made every week and that we took to school as a snack, it was like having a little piece of home in our backpack.

There are really many recipes, with apples you can create a thousand variations, over time I have created apple cakes with yogurt, with ricotta, without butter, with whipped cream but the soft apple cake of grandma is a tribute to my family’s tradition and simplicity.

Suitable for everyone, even those who are approaching the kitchen for the first time it is simple and quick, you will need a bowl, a hand whisk and a scale; with few and simple ingredients you will get a delicious dessert perfect for breakfast and snack for the whole family.

To make an excellent apple cake I recommend using Renette or Golden, two slightly tart varieties that hold up very well during baking, at this time new apples are already on the market that remain very firm and compact, enjoying grandma’s apple cake will be a real pleasure.

Ingredients

  • 1 2/3 cups all-purpose flour
  • 1/3 cup potato starch
  • 3/4 cup sugar
  • 1 jar plain natural yogurt (125 g)
  • 7 tbsp butter (melted and cooled)
  • 2 eggs (medium)
  • 1 packet baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest (grated)
  • 3 Golden Delicious apples (or large Renette)
  • 2 tablespoons brown sugar

Tools

  • 2 Bowls
  • 1 Hand whisk
  • 1 Scale
  • 1 Cake tin springform 9 inches in diameter

Procedure

  • Melt the butter in the microwave or in a bain-marie and let it cool.

    Place the eggs in a bowl, add the sugar and mix well. Add the yogurt, butter, vanilla, and lemon zest, and combine everything with the whisk.

    In the other bowl, sift the flour and potato starch with the baking powder and set aside.

    Wash the apples, peel them, remove the core and cut one into small cubes and the other two into slices.

    Pour the liquid ingredients into the bowl with the dry ingredients and mix with the whisk until you get a lump-free batter.

    Add the apple cubes.

    Pour the mixture into the buttered and floured pan, distribute the apple slices on the surface and finish with the brown sugar.

  • Bake the cake in a preheated static oven at 356°F for 45 minutes.
    Perform the toothpick test to check the cooking, if necessary extend it by a few minutes.
    If the surface of the cake tends to darken too much, cover it with a sheet of aluminum foil.

    The soft apple cake is ready, let it cool completely and serve.

Storage

The soft apple cake can be stored at room temperature, in a cool place for 3 days in the appropriate cake container.
