The puff pastry swirls with zucchini and speck are a delicious and tasty appetizer. The recipe is very easy and the preparation is very quick; in my version, I filled the puff pastry with zucchini sautéed in a pan with a bit of shallot, then added finely chopped speck and completed the filling with gouda cheese that makes everything more delicious.
The procedure is very similar to that of the swirls with mushrooms and sausage, simple, quick, and very tasty. The zucchini swirls are ideal for a buffet, birthday party, or aperitif; if you have time, you can prepare them in advance, store them in the fridge, and bake them just before serving.
Don’t have puff pastry or don’t want to use it? You can prepare the crazy dough or the shortcrust pastry, two excellent bases for both sweet and savory dishes that can be made in a few minutes. The secret to achieving a flaky crust is to roll out the base you’ve chosen very thin and grease it well both underneath and on top, you’ll get a fantastic result!

Ingredients
- 1 roll puff pastry (rectangular)
- 3.5 oz sliced speck
- 5.6 oz cheese (Thinly sliced Gouda)
- 1 shallot
- 2 tbsps extra virgin olive oil
- 14.1 oz zucchini
- to taste salt
- to taste pepper

- 1 Frying Pan
- 1 Cutting Board
- 1 Baking Sheet
Method
Wash the zucchini, remove the ends and chop finely, or if you prefer, you can grate them using a large-hole grater.
Peel the shallot, chop it finely, and sauté it in the frying pan with 2 tablespoons of extra virgin olive oil, add the zucchini and cook for 7-8 minutes over medium heat, stirring often. Turn off the heat and season with salt and pepper, keeping in mind that a lot of saltiness will be added with the speck and cheese, so don’t overdo it.
Finely chop the speck as well and add it to the zucchini.
Let it cool.
Take the puff pastry roll and unroll it, spread the thinly sliced cheese over the entire surface, leaving a one-centimeter border around.
Spread the sautéed zucchini over the cheese. Roll the puff pastry into a cylinder. If you have time, place the roll in the fridge for 20 minutes to make slicing the swirls easier.
Cut into slices about 3/4 inch thick, place them on a baking sheet lined with parchment paper, keeping them well spaced apart.
Bake in a preheated static oven at 392°F for 20 minutes or until golden.
The puff pastry swirls with zucchini and speck are ready, serve them hot or warm.
Tips
How to store the swirls
If you have leftover swirls, you can store them at room temperature for 1 day, or cover and refrigerate them. Before serving, heat them in the oven at 248°F for a few minutes.
