  • 3 zucchini (medium)
  • 4.2 oz smoked salmon
  • Half red onion
  • 2 tbsp extra virgin olive oil
  • to taste fine salt
  • 1.8 oz arugula
  • 10 cherry tomatoes
  • 3.4 tbsp water (for microwave cooking)

Steps

  • To make the microwave-cooked zucchini and salmon salad, first wash the zucchini and remove the stem.

    Slice them into rounds and cook as you prefer, being careful not to let them soften too much.
    We chose microwave cooking at 800w for 11 minutes in several steps, after placing the zucchini on a crisp plate with water.
    Turn occasionally.
    Transfer to a bowl and let cool, then add the salmon cut as you like, the onion cut into rings, and the cleaned arugula.
    Also, add the washed and chopped cherry tomatoes.
    Add oil and salt and mix well.
    Serve immediately.

Microwave Cooking Alternatives

You can cook the zucchini in a pan with two tablespoons of oil, salt, and onion cut into rings, adding three tablespoons of water.

They should soften but not too much, so 15 minutes over low heat, stirring often, will be enough.

In a ventilated hot oven with oil and salt at 356°F for 15-20 minutes. Turn halfway through cooking.

In an air fryer for 6 minutes at 338°F with oil and salt.
