INGREDIENTS FOR NORWEGIAN APPLE CAKE
- 3 eggs (large)
- 1.5 cups sugar
- 2.5 cups flour
- 1.5 cups butter
- 1 packet baking powder
- 2 teaspoons cardamom (ground)
- 2 teaspoons ground cinnamon
- 4 apples (medium)
- as needed slivered almonds (optional)

PREPARATION OF NORWEGIAN APPLE CAKE
Melt the butter in a saucepan or in the microwave.
Whisk the eggs with the sugar until they become light, fluffy and foamy.
Peel 3 apples and cut them into pieces, while the other apple should be sliced for the final decoration.
Mix all the dry ingredients: flour, baking powder, cardamom, and cinnamon in a bowl.
Pour them over the egg mixture, mix and then also add the melted butter which is warm.
Add the apple pieces, gently mix, and pour the batter into the greased and floured baking pan. Garnish with apple slices, sprinkle with a little cinnamon and sugar (if you want, brown sugar is also good, it will give a more amber color to the cake) and optionally slivered almonds. Now bake at 350°F for about 50/60 minutes. Always do the toothpick test.

If it darkens too much during baking, cover with aluminum foil. Store it in a food bag or cake dome.
