The origin of Arroz de leite is due to the expansion of rice cultivation in Brazil after the colonization by the Portuguese.
Several recipes were created using this grain, mainly as a dessert that is easily accessible and affordable.
In the northeast, for example, coconut milk is usually used to make the preparation sweeter for the traditional festa junina, a typical regional celebration where the main culinary preparations are based on a grain, corn or rice, with coconut milk, cow’s milk, or condensed milk.
This is how the popular expression “arroz-de-festa” was born.
In the southeast region, rice milk is prepared according to the traditional recipe that contains only rice and milk in its composition.
Without sweetening, this is a “savory” version, different from the sweet one with condensed milk and cinnamon, as in the Mexican version already on the blog:

- 3/4 cup rice (basmati type)

In a casserole, mix the rice, salt, and water.

When the rice is ready, add the butter and milk, incorporating them into the mixture.
Cook for another 5 minutes, stirring continuously, until the rice reaches a creamy consistency.
Serve the rice hot.
