Bimby Carrots in Vinegar

I like this recipe because it is not just a side dish: it is a small memory that I bring to the table. When I prepare them, the kitchen fills with that sharp vinegar aroma that immediately takes me back home, to the simple and genuine lunches of the past. Cooked this way, the carrots remain crunchy and tasty, ready to accompany even a slice of warm bread for a quick dinner.

Ingredients

  • 1 lb carrots
  • 1 clove garlic
  • parsley (As needed)
  • 3 1/3 tbsp olive oil
  • 1/3 cup vinegar (1/3 cup)
  • 7 oz water
  • salt (As needed)

Steps

    Clean and slice the carrots into rounds.
    In the bowl, insert the water, vinegar, and salt. Place the basket with the carrots. Cook for 15 min. Varoma Speed 1.
    Once cooked, drain and let cool slightly.
    In the cleaned bowl, chop the garlic and parsley for 5 sec. Speed 7, then add the oil and mix for 10 sec. Speed 3.
    Dress the carrots with this emulsion and let flavor for at least an hour in the fridge before serving.


storage

Carrots in vinegar can be stored in the refrigerator in an airtight container for 2-3 days. In fact, they taste even better the next day as the flavors meld.

If you want to make them more flavorful, you can add some capers or a couple of sliced black olives. For a milder taste, try replacing white vinegar with apple cider vinegar.
