The Hasselback Potatoes, also known as “accordion potatoes,” are a typical side dish of Swedish cuisine.
⏺Whole baked potatoes with the skin on which parallel cuts are made and a seasoning of spices, butter, herbs, or cheese.
⏺They owe their name to the restaurant “Hasselbacken” in Stockholm, which first presented them this way in 1953.
Hasselback is the Swedish word for “hazelnut slope,” because the restaurant was located near a hazel grove on a steep mountain.
I seasoned the Hasselback potatoes with Cyprus flake salt, pepper, cumin, paprika, and herbs.

Ingredients
- 7 oz potatoes
- to taste herbs (rosemary, thyme)
- to taste pepper
- to taste spices (cumin, paprika)
- to taste Cyprus flake salt
- 2 tbsp melted butter
Steps
Make slits in the potatoes with the skin (very close together – see video) and brush with melted butter.
And season with herbs and spices – and if desired, also cheese.Bake in the oven at 392°F for 50 minutes.
For the air fryer: 356°F for 35 minutes.
Decorate with Cyprus salt.
Among the most used seasonings is paprika and other spices.
