APPLE MOUNTAIN CAKE INGREDIENTS
- 3 cups apples (pureed or grated)
- to taste ground cinnamon
- 4 eggs
- 1 cup sugar
- 1/3 cup vegetable oil
- 2 1/2 cups all-purpose flour
- 3/4 cup potato starch
- 1 packet baking powder
- 3 apples
- to taste ground cinnamon
- to taste brown sugar

APPLE MOUNTAIN CAKE PREPARATION
Grate or blend cleaned and peeled apples until you get 3 cups of puree.
In a bowl, beat the eggs with the sugar until you get a fluffy and frothy mixture.
At this point, add the oil gradually, the apple puree, and the ground cinnamon.
Finally, add the sieved flours and the baking powder. Mix everything with the electric mixer for another 5 minutes.
Butter and flour a 9-inch cake pan. Pour in the entire mixture, level it well, and add the peeled apple slices on top.
Create a swirl decoration. Sprinkle with brown sugar and another pinch of cinnamon. Now in a pre-heated oven at 338°F for about 45/50 minutes in the center of the oven.
As soon as you take the cake out of the oven, brush it with a mix of water (1/3 cup) and sugar (2 tsp). This will make it shiny, soft, and even more delicious.
Adriana’s Tip
On top, you can also use powdered sugar, instead of brown sugar. This will make the cake lighter and not too amber.
