Peruvian Criolla Sauce:

Also known as sarza criolla or zarza criolla, in Peru it is served cold and is used to accompany meat.

It is the most important accompanying sauce in popular Peruvian food and is used as a condiment for different types of sandwiches besides butifarra: pan con chicharrón and pan con pejerrey, as well as typical dishes like tamales, seco and arroz con pato (duck with rice).
