Mine is the vegetarian version of Kaho Pad, namely Kaho Pad Che ข้าวผัดเจ, for the column #buildthemenu, in the vegetarian menu it is with:

– smoked tofu

– carrots

– mushrooms

Khao pad, or Khao phat, in Thai: ข้าว ผัด, means fried rice; khao means rice, and pad means stir-fried.
“Che” stands for vegetarian.

The Thai fried rice differs from Chinese fried rice because Thai jasmine rice is used instead of the regular long-grain rice.

Prepared with rice first steamed or boiled and then stir-fried in a pan with other ingredients (chicken, pork, vegetables, fish, eggs, etc).

It is seasoned with soy sauce or phrik nam pla sauce (spicy Thai sauce) and served with: salad, lime, cucumber, tomato, and the green part of the scallion.

Ingredients

  • 1 cup jasmine rice

Steps

Boil or steam the jasmine rice

Slice the smoked tofu and stir-fry it in a pan with a dash of oil.

Add the sliced carrot and mushrooms.

Add the rice, soy sauce, and fish sauce.

Stir-fry combining the ingredients.

Serve with salad, lime, cucumber, tomato, the green part of the scallion.

If you want to season with phrik nam pla, combine Bird’s eye chili with chopped garlic, fish sauce, lime juice, and a teaspoon of sugar.
