Meatballs with Meat and Ricotta in Air Fryer without Bread

Meatballs with meat and ricotta in an air fryer without bread, very soft and juicy, perfect for any occasion.

The excuse to make this recipe was, alas, a bit painful for one of my children.

In fact, Luca, my eldest son, underwent a small but quite significant dental surgery and for a week he could only eat soft foods, possibly without any granularity.

And so here I chose to make meatballs in an air fryer, without using breadcrumbs.

An obviously satisfactory result that I chose to share with you, especially now that the first warm days are approaching.

In fact, this recipe is designed to be cooked in an air fryer, so it’s perfect to make in any season.

Alternatively, you can easily bake them in the oven.

Below I leave you some ideas for making delicious and tasty meatballs.

Ingredients

  • 14 oz ground beef
  • 11.6 oz cow's milk ricotta
  • 1 egg (medium)
  • 1.8 oz grated Grana Padano cheese
  • 1 pinch fine salt
  • 1 pinch garlic

Steps

  • To make the meatballs with meat and ricotta in an air fryer without bread, first drain the ricotta well.

    In a bowl, add the ricotta, egg, grated cheese, garlic, in my case powdered, and salt to the meat.

    Mix the ingredients well until you obtain a homogeneous and easily workable mixture.

    If the mixture is too soft, you can add more grated cheese until you reach the desired consistency.

  • Form meatballs of the desired size, give them a rather round shape and, once placed in the fryer basket lined with parchment paper, lightly flatten them.

    Drizzle with a little sunflower oil and cook in the fryer at 356°F for 25 minutes, turning halfway through cooking.

  • Serve with a fresh cherry tomato salad.
