Production of merguez:
As a typical product of the Maghreb, the main ingredients of merguez are exclusively:
mutton or beef;
sheep intestines;
as well as spices (sweet or hot chili pepper, cumin, paprika, cumin, coriander, garlic, mint, fennel, etc.).
However, in France, according to fraud repression, merguez can also contain pork, veal, goat, horse, donkey, mule, poultry, rabbit, game as long as this is specified in the labeling.
The presence of meats other than beef and mutton in merguez without explicit mention is subject to checks by the DGCCRF.
