The Kugelis, also known as bulvių plokštainis (“potato pudding”), is a potato-based dish from Lithuania.

Potatoes, bacon, milk, onions, and eggs seasoned with salt and pepper and flavored with bay leaves and/or marjoram, then baked.

Usually accompanied by smetana* (sour cream), apple or cranberry sauce, or diced pork rind with onions.

Ingredients for a 9.5×12.5 inch baking dish:

  • 2.2 lbs potatoes
  • 10.6 oz bacon (diced)
  • 1 cup milk
  • 2 onions
  • 2 eggs
  • 2 leaves bay leaves
  • 1.4 oz flour
  • to taste salt and pepper

  • 1 Baking Dish 24×32

Preparation of Kugelis:

  • Grate the potatoes and squeeze out any excess water using a cloth.

    Sauté the bacon with the onion.

    Mix the beaten eggs with warm milk, flour, bacon, season with salt and pepper, and add the crumbled bay leaves.

    Add the potatoes.

    Pour into a 9.5×12.5 inch baking dish (about 2.5 inches high) and bake in the oven at 356°F for about 1.5 hours.

    Remove from the oven and cut into squares.

*smetana is a dairy product obtained from cream undergone lactic fermentation, widespread in Eastern Europe. It can be substituted with sour cream.
